At the helm of the bar’s creative vision is Italian Bar Manager Marco Dongi, whose global career spans Michelin-starred hot spots in Milan and legendary lounges in Dubai. Under his direction, Bar Sathorn’s menu offers a multi-sensory journey through time, featuring inventive cocktails inspired by four distinct eras of the mansion’s history:

History of Sathorn (1888–1926): Timeless, classic-leaning serves paying homage to early cocktail culture.

Hotel Royal (1926–1948): Glamorous, Italian-inspired creations celebrating the mansion's hotel era.

Embassy Row (1948–1999): International flavor profiles elevated with vibrant Thai spices.

The Present (1999–today): Bold, modern mixology bridging heritage charm with contemporary flair.
